Hot Cross Buns Recipe

INGREDIENTS

  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 1/4 cups warm milk (about 110°F or 45°C)
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 3/4 cup raisins or sultanas

For the cross:

  • 1/2 cup all-purpose flour
  • 1/4 cup water

For the glaze:

  • 1/4 cup apricot jam or marmalade
  • 1 tablespoon water

METHOD

  1. In a large mixing bowl, combine 4 cups of flour, sugar, salt, yeast, cinnamon, nutmeg, and cloves.
  2. In a separate bowl, whisk together the warm milk, melted butter, and egg until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes, or until the dough is smooth and elastic.
  5. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm, draft-free place for about 1 hour, or until doubled in size.
  6. Once the dough has risen, punch it down and knead in the raisins or sultanas until evenly distributed.
  7. Divide the dough into 12 equal portions and shape each portion into a ball. Place the balls of dough on a greased baking sheet, spacing them a few inches apart.
  8. Cover the baking sheet with a clean kitchen towel and let the dough rise for another 30-45 minutes, or until puffy.
  9. Preheat your oven to 375°F (190°C).
  10. In a small bowl, mix together 1/2 cup of flour and 1/4 cup of water to form a thick paste. Transfer the paste to a piping bag or a plastic bag with the corner snipped off.
  11. Pipe a cross shape onto the top of each bun.
  12. Bake the buns in the preheated oven for 15-18 minutes, or until they are golden brown and sound hollow when tapped on the bottom.
  13. While the buns are baking, prepare the glaze by heating the apricot jam or marmalade with 1 tablespoon of water in a small saucepan over low heat until melted and smooth.
  14. Once the buns are done baking, brush them with the glaze while they are still warm.
  15. Allow the buns to cool slightly before serving.
